Cranberry Walnut Jelly
5 c. cranberries
2 c. water
1/2 c. chopped walnuts
4 1/2 c. sugar
1 box Pectin (or 6 Tbsp if bought in bulk)

Wash your jars in hot soapy water, rinse well. Lay out on a cookie sheet and place in warmed oven. (this dries them and protects them from contaminants)

Place cranberries and water in a large pan. Bring to a boil. Reduce heat, cover, and simmer for 10 minutes. Remove from heat.
Stir in walnuts. Stir in pectin. Measure sugar into a separate bowl and set aside.
Bring to a rolling boil while stirring constantly. Quickly stir in all the sugar. Return to a full rolling boil and boil for exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with a metal spoon (I didn’t have any).

Ladle quickly into prepared jars, filling to within 1/8 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. *Invert jars 5 minutes, then turn upright. After jars are cool, check seals. *OR follow water bath method recommended by USDA.

I will have to make some! I will see if the stores have cranberries on sale still….I will freeze them until I can get to it!
I have a bag of cranberries that I have been using in my juicer….along with carrots,apple,ginger and some orange. I just add a 1/2cup of the whole berries to the juicer with the other stuff! Yummo!
