Finding time to make lunch when you homeschool can be a challenge, so I thought I would share with you my absolute favorite “help-I-ran-out-of-time” lunch recipe (which doubles as my “help-I-ran-out-of-time” supper recipe!):
lettuce
beans
hamburger
tortilla chips
cheese
salad dressing or salsa
Shred lettuce (as you can see we added spinach leaves as well), add beans and meat, crush tortilla chips, add cheese. Serve with dressing or salsa. Watch ’em devour it!
(Note: Often I end up thawing the meat in hot water and then cooking the meat on low with a lid on it while we continue to school.)

I haven’t had taco salad in a while and we used to eat it ALL the time – especially for lunch. Such an easy meal. Isn’t it weird how we forget things we used to eat? It’s like we get sick of them, quite for a while and then forget we ever ate it! ha! Oh well… thanks for the Taco Salad reminder. 🙂

We just had taco salad last night for dinner–I really piled on the toppings, too, while the kids stuck with traditional tacos.
While I was eating, I thought, “This is such a fast and easy meal, and the kids can get most of it ready on their own!”
I like what you call it: “help-I-ran-out-of-time” lunch/supper.

Ha ha! I thought that I was the only one who thawed meat in warm water!
You know, sometimes you just can’t remember EVERYTHING!
I often cook extra ground beef to keep in the fridge for lunch. We make taco salads, Mexican omlettes, quick burritos, or what we call “Loose Meat Hamburgers”!
You gotta do what you gotta do!

Mmmm! Love taco salad! That’s my favorite company meal, because people can take as little or as much as they want, and can take only the items that they want (if you do it buffet style), and it always turns out. My favorite toppers to the traditional items are coconut and pecans. That sounds weird, but it gives the taco salad a “fiesta” taste. Mmmm.

That is a good one – but I have perhaps an easier one – put chicken breasts in the crock pot – they can even be frozen! Add a whole jar of salsa and just dump it on top. Put on the lid, and cook all day on low or high for a couple of hours. The chicken will be so tender, when it is done, just take 2 forks and shred it in the crock pot. Use it in taco shells or soft tacos and enjoy!
