Trim Healthy Mamas has a recipe for Skinny Chocolate that resembles a recipe my friend Misty shared with me. I have not tried the recipe proportions from THM, but I have tried this recipe and it is a hit! My husband absolutely loves it and will often be heard saying,
“Could you whip up some of that chocolate stuff?”
So, here’s the recipe for “that chocolate stuff”, also known a…
Coconut Peanut Butter Fudge
1/3 cup coconut oil
1/3 cup peanut butter
1/3 cup cocoa powder
Stevia to taste (I use NuStevia – more on this below)
Mix all ingredients until smooth. (If you want it really smooth, melt your coconut oil first. We’re too lazy to take the time to do that and besides, we don’t mind the tiny bits of coconut oil).
Spoon onto a wax-paper lined plate and smooth to edges. Pop in the refrigerator for a bit. Break apart and enjoy!
A couple of notes on ingredients:
Coconut Oil – we buy ours by the gallon from Azure Standard (delivered by none other than one of Raising Arrows’ sponsors – Covenant Ranch Trucking!)
Peanut Butter – I’ve used both natural and regular ole Aldi peanut butter. Yes, I know regular peanut butter has sugar in it. Don’t hold it against me.
Stevia – You want the NuStevia Pure. A little bit goes a long way.
And yes, I am fully aware of the controversy surrounding stevia. I use it in moderation because frankly, of all the sweeteners out there, it is the only one I have ever found (natural or not) that doesn’t make me crave even more sweet stuff. Serene and Pearl did a lot of research on stevia and they go over their findings in the book. In the end, you have to decide for yourself. My choice is a little bit here and there to keep any sugar cravings at bay.

Thanks for posting this, as well as your recent review of THM! It was the final straw that convinced me to take the plunge and order the book this weekend, after first hearing about it last fall. I know that I have insulin issues, GD in last 3 or 4 pregnancies, plus increasing difficulty with losing weight after baby. My baby is 8 months, and I still have 17 lb left from this pregnancy and 13 lb from an earlier one. Since I’ve always conceived at 10-14 months postpartum, I feel like I’m running out of time.
So, I’m waiting on my book, and the NuStevia I ordered, and then I’d love to try this! In the meantime, I’m doing my best to eat the THM way based on the bits I’ve heard and what I could find from browsing the book on Amazon. Can’t wait for my book and to get some of the ingredients/foods I need. I’m really hopeful!

This was pretty good considering it was sugar-free. But, I definitely noticed a too-sticky peanut butter texture in my mouth as the bites dissolved. I think next time I’ll try reducing the peanut butter to 1/4 cup.

Hi, I just though I’d let you know that the first five links I clicked on from the link-ups were “1-minute Bible love notes” (#26-31). I have seen this happen with most of the other Christian blogs I read and their weekly link-ups. I’m not sure what the owner of that blog intends to accomplish, and I’m certainly not trying to be a tattle-tale. 🙂 But I severely limit myself in “surfing”, and when I’m trying to get homemaking tips from a Christian blog’s link-up list, it’s a little troubling to keep being directed to the same blog repeatedly. Maybe a review of the link-up rules would be in order? Obviously, you can do whatever you’d like with this, I just thought I’d let you know it was happening. 🙂

I don’t know if this is weird or not, but I enjoyed it on my toast. It melted and was a brilliant substitute for nutella (not that we buy that anyway), but it was a great treat.

It was great seeing you yesterday. It was fun talking THM. I’m looking forward to trying this version of the skinny chocolate. Peanut butter n chocolate, how can you go wrong! I have used stevia for years and like it. I do have a sweet tooth so is helps me enjoy sweets without the insulin problems. Sure, honey and sucanat may be more natural, but the consequences of eating a lot of that far outweigh the little bit of processing or refining a tiny sprinkle of stevia has. Insulin resistance, diabetes, obesity, etc. I used to do the Adkins diet and Dr Adkins even didn’t mind the artificial sweeteners in moderation because all the diseases caused by eating too much sugar he felt were worse than the side effects of the artificials. If he were still around he may change his mind based on research on aspartame these days, who knows. My kids have no problem eating stuff sweetened with stevia. All our smoothies n yogurt are sweetened with it. I’m still figuring out baking with it. There is an awesome website called Healthy Indulgences that has awesome bakeing recipes using stevia, erythritol, and xylitol.

LOL – NOT a cup! This is going to sound really goofy, but I give a couple of shakes. My suggestion is try a little shake and take a lick. Add until it tastes the way you want it to. I’m guessing I use about 1/2 tsp.???

Amy, I know this is an older post, but because I’m seriously considering the book, I do hope you can respond to this comment?! Pretty please?
It is rather expensive, and because I have allergies and food intolerances that include no dairy, gluten and cannot digest fats well, I was wondering if it would still be worth the money since a lot of their recipes seem to advocate a lot of nut flours, butters, etc. as well as dairy.
I couldn’t find a place to contact them with questions on their website.
I might be trying that Stevia. It sounds much better than the average since the company says they took the bitter flavor out of the extract! Thank you, Amy!

There is a lot to the book, so the price actually makes sense once you get the book, but there are a lot fats as part of the program, so this might not be for you. I do highly recommend the stevia! I’m trying the Pure this time b/c it doesn’t have the maltodextrin in it. You only need a small amount and it doesn’t have that yucky aftertaste. 🙂
