Chicken Fajita Soup from Trim Healthy Table – a cookbook full of healthy meals your family will love as much as you do!

Over the years, one of the biggest complaints about diets and eating plans is that they are rarely family friendly. No mama wants to be cooking and eating something entirely different from her family (Hello?! I don’t need MORE work to do!)
I’ve shared before about the Trim Healthy Mama by Pearl Barrett and Serene Allison, and I’ve had a lot of readers ask me how to make Trim Healthy Mama work with a large family. While I’ve had my own personal tricks and tweaks, I now have a not-so-secret weapon I can hand them!

I love cookbooks almost as much as regular books, so as soon as this one came to my door, I devoured it!
I noticed right off how simplified everything is. Even if you had never heard of Trim Healthy Mama, you could pick up this book and make it work!
And the recipes are AMAZING! Every single recipe I have tried so far has been really easy to throw together (exactly what this busy mama needs) and delicious (exactly what my hungry crew needs)!

All of the ingredients, except the cream cheese, went into the slow cooker around lunch time.
You might be wondering why I have collagen in a tin like this.
It’s because Baby Mercy has a syndrome that affects the collagen in her body, so we use it a lot. The Chicken Fajita Soup recipe called for it, so I made sure Miss Mercy got some of the broth!
After 6 hours on high, I took a bit of the broth and put it in the blender with the cream cheese, gave it a whir and poured it back in.
Then, I removed the chicken to a bowl and shredded it with forks and returned it to the slow cooker.
And that was all there was to it!

Long time reader, first-time commenter. 🙂 I’ve been trying to figure THM out and got the books out from the library. I was barely able to look at the cookbook before it had to go back. (We have a HUGE library system, but all the THM books have holds on them so I can’t renew them!) I haven’t bought a cookbook in years, but am considering this one! I just had baby #5 and was so pleased to see these recipes will actually feed my whole family. And as I’m learning more about THM I see how it fits with our attempts to eat a real food diet, while extending grace when life is too overwhelming to do so.

When I did THM when it first came out there was so little by family actually liked. Therefore it simply didn’t work for us in the long run. I’d love a chance for some more family friendly recipes!!!

Start with only 1 meal….keep that one regularly THM, then add others. Also, quick little changes here and there make a non THM meal easily THM. Taco night – ground turkey – fix it like you always do… the only change is either eat over Brown rice ( I make a batch at the start of the week and add it to e meals) or I buy for myself on plan tortillas. I eat soup several times a week-(on,y hubby and I eat it – kids pretty much eat sunflower butter and sandwhich daily…… . I just alternate soups. I eat poached eggs,nearly daily for breakfast.. kids fix themselves breakfast. Dinner seems to be the easiest, but we are casserole people – so if the meat is an S, I fix yummy s veggies and a carb (kids and hubby eat, I skip carb)..

There are tons of casseroles you can do on THM! They use eggs, or cauliflower or konjac noodles as the filler a lot of times.

I still prefer moderation. I eat some monk fruit and I do ok with a little bit of THM’s blends, but I really try not to go overboard. I’d rather eat a piece of fruit and work toward not needing the artificial sweetness.

Can you tell me more about how collagen helps Mercy. And how it’s given? A friend of mine also has a condition that basically causes her body to not have enough collagen.
I know, super random….and not related to soup…but she is like a sister to me, and I’ll do anything to help.

I put it in smoothies and then feed her the smoothies. You can take pills, but I just use the powder. I do sometimes put it in my coffee, but I don’t give that to Mercy. 😉 Some people will tell you it won’t work, but I’m willing to try it.
